Paul & Laura Moir
Owners
With more than 20 years of experience in the restaurant industry, Paul & Laura first met while working at a restaurant in Phoenix. During their 5 years living together in Colorado, Paul earned a culinary degree from Johnson & Wales University and both Paul and Laura earned first-level Sommelier certifications.
In mid-2005, Paul and Laura moved from Colorado to Flagstaff and opened Brix Restaurant & Wine Bar in May of 2006. Brix quickly became Flagstaff’s premier dining destination and has received national and worldwide press from publications such as Conde Nast Traveler, Sunset Magazine, and Arizona Highways.
Criollo is a collaborative effort built upon the philosophy of local and sustainable foods.

Executive Chef
David began his culinary career 15 years ago in Charlottesville, Va. Since then he has honed his craft in Roanoke, Scottsdale, Portland, Vancouver, and earned a degree from Arizona Culinary Institute. It was during his time in the progressive culinary & cultural scene of the Pacific Northwest that he was introduced to the Slow Food movement, and the importance of working with organic & sustainable ingredients.
